Aroma is one of the most important components when it comes to evaluating the quality of wine. Therefore, if one wants to fully appreciate all the intensity of a good wine, one must be able to distinguish all its nuances. To differentiate all the aromas that a good wine can be made up of is a difficult task, and to accomplish it one must train their sense of smell.

Rose, rose The rose flower has always been appreciated in the Western world, both for its beauty and its pleasant fragrance. The scent of roses has been used and is still widely used in perfumery, cosmetics and as an aromatize (such as the famous rose tea). The aroma of roses is linked to the variety of Muscatel grape, from which Muscatel wine is obtained (sweet and fruity) and also the Gewürstraminer variety. Some rosé wines made with the Grenache variety, contain traces of rose in their bouquet. It is also present in bottle-aged quality red wines.

Violet, fiol The flower of the violet radiates an intense, characteristic and mysterious fragrance, and its colour suggests nobility. The use of violets in perfumery, cosmetics, gastronomy and pharmacopoeia (for coughs and colds) has always been widely known. It is an aroma of the floral family that evokes non-spiritual notes. This characteristic aroma can be appreciated both in white and red wines: in the Merlot, Tempranillo, Chardonnay, Viognier, Syrah grape varieties.

Amber, rav A delicate aroma of the animal range. It comes from the secretion of the sperm whale that in time acquires a characteristic perfume associated with tobacco, silex and leather. This aroma comes from Chardonnay vines and can be appreciated in mature white or red wines.

Leather, lær In spite of the amplitude of this aroma, it basically refers to the smell released by leather made from tanned cattle skins. Although skins may produce unpleasant smells: during tanning they are processed to release pleasant aromas, particularly those from wood (tannins) depending on the required effects and use. This is a tertiary aroma in vines that is strengthened during the ageing process. Therefore, it is difficult to detect this aroma in young wines. Varieties of vines rich in tannins such as Monastrell, Tannat or Merlot may produce leather notes.

Pine, furu There are numerous varieties of this conifer which grows in the major part of the world: from the coast up to an altitude of 2500 metres. The characteristic fragrance of the pine is well known and has been used since ancient times as a balm, perfume and aromatize. This aroma is common and familiar in the Mediterranean and can therefore usually be detected in the red wines of this region, although not exclusively as it is also found in mature wines with great personalities, such as Medoc and Santenay.

Truffle, trøffel This fungus grows in the roots of the certain trees and is found mainly in Spain, Italy and Spain. The most valued truffles are found in oak forests. The aroma of the truffle is very complex and difficult to classify. It is between vegetal and animas aromas. And is associated with perfumes of humus, dead leaves and dead game. This aroma is found in vel-evolved, complex, profound wines that gradually manifest there aromatic richness. Priorato, Rioja, Ribera de Duero, Médoc, Côtes-du-Rhône, Cahors.

Mushrooms, sopp The mushroom is a fungus growing in meadows, with a wide cap and short stem, its flesh is soft and exquisite, highly appreciated in gastronomy and is closely related to wine. Placed among tertiary aromas, mushroom must be quickly detected, as it disappears once the wine is aired.
